Cocktail Recipes with Echo Falls Fruit Fusion



Who doesn't enjoy a nice cocktail? Especially in these warmer afternoons we've been having lately. The sun and cocktails, a girls best friend. 

Last week Echo Falls kindly sent me two bottles of wine from their Fruit Fusion range to try out. They suggested I try make a cocktail or two with them and I couldn't wait to start experimenting. I would of never of thought to use the wine in a cocktail as it is lovely on it's own but I couldn't wait to give it a go. 


Summer Serendipity

Ingredients:
70ml Echo Falls Fruit Fusion White Peach & Mango
1 slice of lemon
1 slice of lime
1 slice of grapefruit
1 slice of orange
10ml elderflower cordial
5ml pomegranate syrup
Crushed ice
Pomegranate seeds and a mint spring to garnish

Method:
Slice the citrus fruits into wedges and muddle in a hi-ball glass, add the Fruit Fusions White Peach & Mango, elderflower cordial and crushed ice then stir. Drizzle with pomegranate syrup. Garnish with pomegranate seeds and a mint spring.




Echoes of Pink

Ingredients:
50ml Echo Falls Fruit Fusion Summer Berries
25ml raspberry purée
20ml lemon juice
5ml ginger cordial
5ml sugar syrup
20ml egg white
Edible pink glitter to garnish




Method
:
Mix and shake together all the ingredients in a cocktail shaker. Add ice and shake again for 2 minutes. Strain cocktail into a chilled coupette glass and sprinkle with edible pink glitter to garnish.


I did sample Summer Serendipity and it was like sipping pure sunshine, I will be making that again! It was so refreshing and light, almost too easy to drink! I haven't tried Echoes of Pink just yet but as the recipe sounds divine I just had to share it.

Knorr Product of the Year - Recipe Challenge


A couple of weeks ago Knorr asked if I would like to take part in a recipe challenge to celebrate the fact that they deservedly won first place in the Sauce and Seasoning category at the Product of the Year Awards! I do cook a lot of homemade meals (but don't often blog about it) so I thought I would take up the offer, it sounded like lots of fun!

For the challenge I was sent a huge hamper full of the award winning Knorr flavour pots, lots of ingredients both fresh and packet and a shopping voucher. Once it arrived it was then time to come up with a recipe!

There were so many different meals I could of made with what was provided but I decided to go for a real winter warmer.



Sausage, pepper and butternut squash casserole with a side of sweet potato mash.

Ingredients

6 sausages
1 large onion
2 peppers
1 butternut squash
1 tin of chopped tomatoes

1 paprika stock pot
200ml of water
pinch of pepper
sprinkle of salt

2 sweet potatoes (for mash)
spoonful of butter
sprinkle of salt



Directions-

1. Cut up peppers, butternut squash, onions and place in casserole dish.

2. Brown sausages in the pan. Once browned add to casserole dish with the raw chopped veg.

3. Pour chopped tomatoes and the boiled water into the dish.

4. Add paprika stock pot.

5. Season to taste.

6. Give a good stir and cook at 180oc for 1.5 hours (or until thoroughly cooked)

7. While waiting for casserole to cook peel sweet potatoes, boil and mash.





The finished result! It was perfect for the cold weather we are having and it went down a treat, especially with the other half!
